The Best Summertime Recipes to Make on Vacation

Creamy Goat Cheese Pasta with Asparagus

This goat cheese pasta is a delightful and light creamy summer dish that offers a unique twist with its goat cheese cream. Perfect for a summer day or a winter night, it can also be enhanced with chicken for added protein.

Ingredients:

  • Lemon
  • Chicken stock
  • Pasta
  • Asparagus
  • Goat cheese
  • Parmesan
  • Flour
  • Butter

Directions:

  1. Cook the pasta according to package instructions.
  2. Cut the asparagus into bite-sized portions. Boil water and cook the asparagus for 3 minutes. Strain and place them in an ice bath.
  3. In a saucepan, heat 2 tablespoons of butter.
  4. Whisk in 2 tablespoons of flour, stirring continually.
  5. Over medium heat, gradually stir in about half the chicken stock (if using a box) or a full can if using canned stock. Stir continually until the sauce thickens.
  6. Stir in a 4-ounce package of goat cheese.
  7. Add 2 tablespoons of Parmesan and the zest from one lemon.
  8. Add the asparagus into the sauce.
  9. Serve the sauce over pasta and top with more Parmesan.

Chicken Saltimbocca

This easy yet sophisticated dish features tender chicken breasts topped with savory prosciutto and creamy mozzarella, creating a delightful combination of flavors. Perfect for a date night or a family dinner, it pairs well with a variety of side dishes.

Ingredients:

  • 4 boneless, skinless chicken breast halves, lightly pounded to an even thickness
  • Kosher salt and freshly ground pepper
  • 1/3 cup all-purpose flour
  • 2 Tbs. unsalted butter
  • 1 Tbs. extra-virgin olive oil
  • 2 tsp. chopped fresh sage or 1 tsp. dried sage, plus 4 sage leaves for garnish (optional)
  • 2 large slices prosciutto, not paper-thin, trimmed to fit chicken breasts
  • 1/4 lb. fresh mozzarella cheese, thinly sliced and trimmed to fit chicken breasts
  • 3/4 cup dry white wine such as Pinot Grigio or Sauvignon Blanc

Directions:

Step 1: Season the Chicken Season the chicken breasts with salt and pepper. Spread the flour on a plate and dredge each breast, coating evenly and shaking off the excess. Set aside.

Step 2: Cook the Chicken In a large fry pan or sauté pan over medium-high heat, melt 1 tablespoon of the butter with the olive oil until very hot. Add the chicken breasts and cook until the undersides are golden brown, 5 to 6 minutes. Turn the chicken breasts over and continue to cook until they feel firm when pressed in the centers, 4 to 6 minutes more.

Step 3: Top the Chicken Reduce the heat to very low. Sprinkle the breasts evenly with the chopped or dried sage. Top each breast with a piece of prosciutto, then divide the cheese slices evenly among the breasts. Cover the pan tightly and cook until the cheese is melted, about 1 1/2 minutes. Transfer to a serving platter and tent with aluminum foil, being careful not to allow the foil to touch the cheese.

Step 4: Deglaze the Pan Increase the heat to high. When the pan is sizzling, add the wine and deglaze the pan, stirring to scrape up any browned bits stuck on the pan bottom. Boil until reduced to 1/4 cup, about 3 minutes. Remove from the heat and whisk in the remaining 1 tablespoon butter.

Step 5: Serve Spoon an equal amount of the sauce over each breast, then garnish with a sage leaf. Serve immediately.

Summer Watermelon Salad

This watermelon salad is a summer classic and is a great side dish to make when traveling to those warmer destinations. The Mediterranean inspired salad is extremely refreshing and gives a great combination of salty and sweet that pairs well with other dishes. The salad is quick and easy to make allowing you to enjoy more time with your travel companions!

Ingredients:

Watermelon Salad

  • 1 small watermelon or 1/2 large watermelon, peeled and cut into cubes
  • 1 English cucumber or hot house cucumber, thinly sliced (if using American slicing cucumbers, peel and seed them first)
  • 1 cup packed mint leaves (about 15 leaves), roughly chopped or torn
  • 1 cup packed basil leaves (about 15 leaves), roughly chopped or torn
  • 1/2 cup creamy crumbled feta cheese

Honey-Lime Dressing

  • 2 tablespoons honey
  • 2 tablespoons lime juice (or lemon juice if preferred)
  • 2 tablespoons extra virgin olive oil
  • Pinch of kosher salt

Directions:

Step 1: Add your watermelon cubes, cucumber, torn fresh herbs to a large bowl.

Step 2: Pour the Honey-Lime dressing over the salad and then gently mix the salad.

Step 3: Crumble the Feta Cheese and spread it over the salad and enjoy!
